Crispy Aloo Pyaaz | Recipe

Ask anyone what food I love the most in the world and they’ll tell you it’s the aloo pyaaz my mom makes. Ever since I was a little girl this has been my comfort food… the one item that I can eat ANYTIME… ALL the time!

 

So today I thought of sharing the recipe with you… it’s super simple and takes less than 15 minutes to cook. Let’s get cooking good-looking ;P

 

Ingredients

 

  • 4 medium size Potoatoes
  • 1 large onion
  • 1/2 tbsp Ginger- Garlic paste
  • Salt (to taste)
  • Pepper (to taste)
  • 5-6 Curry Leaves (Kadi Patta)
  • 1 Green Chilli
  • Fresh Coriander
  • Oil

 

 

Method

 

  • Start by thinly slicing the washed and peeled potatoes as well as onion (much like the shape of french fries). Soak the potatoes in a bowl of water for the time being.
  • *Now there are two ways you can make this crispy aloo pyaaz sabzi – my mom deep fries the potatoes to make them crisp and crunchy, but I prefer to use a non-stick pan and not more than 2 tbsp of oil…so choose whichever one you prefer 🙂 
  • In a pan add some oil and throw in the finely chopped onion. Saute on medium flame till it turns light golden in colour.
  • To this add the ginger garlic paste + chopped green chilli and cook for another minute.
  • You can now add in the thinly sliced potatoes and mix well.
  • Top it up with salt and pepper to taste and throw in the curry leaves as well.
  • Mix everything well and let this cook on medium heat for about 5 minutes so the potatoes become crispy. Keep turning the potatoes every few minutes to avoid burning and do not cover the pan with a lid.
  • Once you see the potatoes have become crisp and golden brown, you can cover the pan with a lid and let this cook for another 5-8 minutes.
  • Sprinkle some finely chopped fresh coriander on top and serve with rice and dal or a laccha parantha!

      This recipe has been my comfort food for all my life! It’s a super easy recipe….minimum ingredients and literally takes like 10 minutes to cook 🙂
