Lemon and Honey Chicken | Recipe

When it comes to food and cooking, Lemon and Honey are two of my absolute favourite ingredients…so it’s no surprise that today’s recipe is a perfect 10 in my books!

Lemon and Honey Chicken is a delicious, sweet and tangy recipe that is probably the Yummiest and best chicken recipe that you can whip up for your family in less than 20 mins!

A fantastic source of protein, chicken has taken up a major portion of my husband and my diet lately. I cook chicken several times a week, and so coming up with new recipes is as much fun as is important to make sure we don’t get bored of home-cooked food.

My Lemon and Honey chicken recipe is very easy to make – it’s delicious, juicy and tender chicken that is citrusy, sweet and tangy all at once!

Let’s jump right into the recipe!

 

Ingredients

 

  • 500 gms of boneless chicken breast
  • Juice of 2 lemons
  • 1 tbsp ginger-garlic paste
  • 1 tbsp honey
  • 4 tbsp olive oil
  • 1/2 tsp Turmeric (haldi) powder
  • Salt to taste
  • Black Pepper to taste

 

Method

 

  • MarinadeTake a bowl and add the olive oil, honey, Lemon, ginger-garlic paste, turmeric, salt and pepper. Whisk it all together to make a dressing.
  • Wash the chicken and make incisions in the skin (you could also first cut the chicken into cubes)  to make sure that the marinade seeps into the chicken. 
  • Next place the chicken into the bowl with the marination and evenly coat it with the marination.
  • Cover the bowl with a plastic wrap. Place in the refrigerator for about 2-3 hours. I personally like to leave mine overnight.

 

Cooking on the stove (using a grilling pan)

  • Put a small amount of butter or olive oil into the grilling pan and place the marinated chicken on the pan on medium heat.
  • Cook for 3-4 minutes on each side until golden brown. you can poke the chicken to see if it is cooked through.
  • Drizzle the leftover marination on top of the chicken and cook for 2 more minutes.
  • Once done, add the finely chopped coriander leaves and serve with rice as the base. I like to serve mine with cauliflower rice (Check out the RECIPE).

 

Cooking in the oven

  • Preheat the oven to 200 degrees C or 425 degrees F.
  • Take a large, oven-proof pan and coat the bottom with olive oil or butter.
  • Add the chicken to the skillet and keep the temperature to medium-high heat. Pour the excess marinade on top.
  • Once the chicken turns golden brown (takes about 5 minutes), flip the chicken and cook for a few more minutes.
  • Turn the heat off and bake the chicken for another 10 minutes until fully cooked.
