Whoever said Tofu is boring and bland never really experimented with it!
Tofu is such a wonderful and versatile item to add to your diet, especially if you’re on the lookout for a meat substitute. If you’ve never tried tofu before, I urge you to, because trust me you will fall in love with it.
Today I’m sharing with you a very simple and healthy Stir Fry Chilli Tofu Recipe. So let’s jump right in:
Ingredients
- 200 grams Tofu
- 1 large red onion
- 1 large green capsicum
- 1 large red capsicum
- Broccoli
- 2 stalks spring onion, diagonally sliced
- 6-8 cloves of garlic, crushed
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tbsp vinegar
- 2 green chillies, diagonally sliced
- Salt, to taste
- Pepper, to taste
- Coriander, finely chopped
Method
- Wash the tofu, cut in cubes and soak it in a bowl of water while you are chopping the rest of the ingredients.
- Begin by chopping the onion and capsicum. I like to have thicker chunks of red onion and capsicum in my stir fry, but you could also cut them in strips if you prefer that.
- Heat the olive oil in a pan, add the crushed garlic and onions to it. Sauté on medium heat for about 2 minutes. I like to add salt at this point.
- Next throw in the capsicum, broccoli and green chillies. Mix and sauté for another couple of minutes.
- Add in the tofu cubes. Next sprinkle some pepper (to taste) and mix well.
- Add the soy sauce and vinegar and toss all ingredients nicely.
- You can now add in the chopped spring onions and mix lightly.
- Cook on low heat for about 5 more minutes.
- Your stir fry tofu is now ready!
- Garnish with some finely chopped coriander and serve hot.
