How To Make Cauliflower Rice

 

If you’re a rice-lover and are looking to add a little detox to your everyday meal, you’re at the right place!

Today we are talking about Cauliflower Rice – it’s Rice, but without the Grain…plus it is a Paleo-friendly Recipe….woohoo!

I never in my life thought I’d ever eat Cauliflower rice, it sounded so unappealing, but the first time I tried it – it was LOVE!

Recently, my husband and I decided to clean up our diet …to eat healthier….try to order in food lesser times a week and basically lose weight.

Needless to say, the first change we had to make in our diets (especially as Indians) was to do away with the Wheat intake (Roti’s) in our diet. Once we started looking at the options available, the one that seemed the most easy to cook was Cauliflower rice, so we tried it… and we loved it!

Now if you too are looking to replace grains in your diet for veggies and you don’t want to compromise on flavour, then give this delish cauliflower “rice” a try – it’s vegan, paleo perfect, plus is a powerhouse of antioxidant-rich nutrients. Not just that, it is also high in Omega-3 fats as well as Fiber.

Cauliflower rice is such a great way to add more vegetables into your diet, we like to have this alongside Honey-Lime Chicken or Grilled Fish. You can also use it as a base for varied stir-fry!

 

Ingredients

 

  • 2 medium-size cauliflower florets
  • 2 tbsp olive oil or butter
  • 2 red onions, chopped roughly
  • 8 garlic cloves, minced
  • 1/2 inch fresh ginger, finely chopped
  • 2 green chillies
  • Juice of 1 lemon
  • Fresh cilantro leaves
  • Salt to taste
  • Ground pepper, to taste

 

Method

 

  • Grate the cauliflower florets or pulse using a food processor. It should look like short-grain rice.
  • Heat butter or olive oil in a pan on medium heat.
  • Add the chopped onions, chilli and ginger-garlic into the pan and stir until golden brown.
  • I like to add in a pinch of salt at this point to help the onions lose the moisture.
  • Next add in the cauliflower and stir all the ingredients well.
  • Season it with ground pepper and a little more salt if needed. Squeeze the lime on top and stir.
  • Cover the pan with a lid and let it cook on low heat for about 6-8 minutes. Keep stirring every few minutes to make sure the cauliflower is cooking evenly.
  • Once done, add in the finely chopped cilantro and serve!

 

Cauliflower is not just yummy, but it’s also very good for your health – it not only helps in detoxification, it is also high in Vitamin C and K. You are decreasing processed carbs in your diet, plus you’re adding a heavy load of antioxidant rich food, which will help you increase your metabolism and lose weight as well.
